“Nard and saffron, calamus and cinnamon, with every kind of incense tree, with myrrh and aloes and all the finest spices.” Song of Songs 4:14

These gifts from the earth remind us that God has filled creation with abundance and flavour.

Curries are a wonderful example of how vegetables, spices, and grains can come together to make healthy and satisfying food. Choosing vegetable-based meals can be good for our health and gentle on the planet, as growing vegetables generally uses fewer resources than producing meat.
Cooking simple vegetarian meals can also be a way of giving thanks for the gifts of the earth. With just a few vegetables, some spices, and a little time, we can create meals that nourish our families and bring people together around the table.
Here are three very simple vegetable curry ideas:
- Easy Potato and Pea Curry
Fry one chopped onion in a little oil. Add one teaspoon curry powder, three chopped potatoes, and a cup of frozen peas. Add one cup of water or vegetable stock. Simmer for about 20 minutes until the potatoes are soft. Serve with rice.
- Lentil and Tomato Curry
Cook one cup of red lentils in two cups of water. In another pan fry onion, garlic, and one teaspoon turmeric or curry powder. Add a tin of chopped tomatoes and the cooked lentils. Simmer for 10 minutes and serve with rice or bread.
- Mixed Vegetable Coconut Curry
Fry onion, garlic, and a teaspoon curry powder. Add chopped carrots, cauliflower, and green beans. Pour in one tin of coconut milk and simmer until the vegetables are tender.
